A variety of apples were used to make this cider including Gala, Ambrosia, and Pink Lady. The apples were crushed, pressed, and cold fermented in a stainless steel tank. Gewürztraminer grapes, which were the primary wine component in this blend, were crushed and left on the skins for 4 hours before a light pressing, and then fermented and matured in neutral oak barrels for 4 months. After maturation, the dry apple cider and Gewürztraminer were blended in tank. A small percentage of Merlot was added to give this blend the lovely pink colour.
